Ingredients for 4 portions:

 

1 onion, chopped

2 chillies, red, chopped and seeded

1 stick of lemon grass, chopped

1 lemon, the juice of which

1 tsp coriander powder

½ tsp curcuma

Extra virgin olive oil

½ Litres of fish stock

½ litres of coconut milk

½ tsp fish sauce

2 kg mussels

Cilantro, fresh, for garnishing

 

 

Preperation of the Hot Mussels in Vietnamese Coconut Sauce:

 

Puree onion, chillies, lemon grass, lemon juice, coriander powder and turmeric together in a blender.

 

Heat some olive oil in a saucepan and roast the paste for 5 minutes while stirring. Now add fish stock and coconut milk and bring to the boil with the fish sauce.

 

Wash and add the mussels, then cook covered for about 8 minutes until the mussels have opened. Serve with fresh cilantro.
