Mee goreng – means fried egg noodles and is a widespread speciality in Indonesia. This simple dish is available in many different variations at every snack bar and in every restaurant.
There are several types of asian noodles dishes. Today we would like to introduce you to our favourite Mee Goreng with chicken and shrimps, as we know it from Bali. Ingredients for 4 portions

  • 400 g thin Asian egg noodles (Mee noodles)
  • 250 g chicken breast fillet
  • 250 g raw, peeled prawns
  • 1 tsp Sambal Oelek
  • 2 tbsp light soy sauce
  • 2 tsp palm sugar
  • 1 tbsp Ketjap manis
  • 350 g Pak Choi
  • 1 carrot
  • 1 onion
  • 1 clove of garlic
  • about 2 cm ginger
  • 4 tbsp oil
  • 100 ml chicken broth
  • Krupuk

 

 

Preparation

Cook the noodles according to the instructions on the packet, drain, rinse with cold water and drain well.

Cut the chicken breast filet into thin slices.

Mix Sambal Oelek with soy sauce, sugar and Ketjap manis.

Wash and clean the Pak Choi. Cut the leaves into finger-wide strips, the stems into fine strips. Peel the carrot and cut into thin strips. Peel the onion, garlic and ginger and chop finely.

Heat a wok, let 3 tbsp. oil become really hot and then add the noodles. Stir-fry over a high heat until the pasta is slightly crispy. Remove the Mee noodles from the wok and set aside.

Heat the remaining oil and sauté the onion, garlic, ginger, carrot sticks and meat for about 1 minute, stirring constantly. Add the prawns and the pak choi and stir for another 2 minutes.

Add the Sambal Oelek mixture and mix in the noodles. Gradually add the broth and fry for another 2 minutes stirring. The noodles should be juicy, but still a bit crispy.

Season to taste with salt and serve. Serve with Krupuk and Sambal Oelek to season.
